Apache / Trouble directing subdomain to roundcube webmail login

I hope this is the right place to post this.
I'm having trouble with roundcube webmail access.
I had my server up and running fine, but went to upgrade to the newest CWP and it crashed. I ended up having to rebuild the server.
I installed fresh with the latest CWP and my problems is that roundcube isn't showing in /usr/local/apache/htdocs as everything I can find when searching says it should. The only roundcube I can find is under /usr/local/cwpsrv/var/services/roundcube.
My issue is that I previously had a subdomain of mail.domain.com that directed to the webmail login. If I use domain.com/webmail it comes up fine. I tried configuring virtualhosts to point to /usr/local/cwpsrv/var/services/roundcube assuming that it had changed, but I get a 500 internal server error when accessing mail.domain.com when doing that.
I have spent countless hours over the past few days trying to resolve this so any help is greatly appreciated.
