Are you able to connect via SSH with the data? Probably your server has blocked TCP OUT to port 2211
Try to open the port in /etc/csf/csf.conf => TCP_OUT or try to disabvle firewall and test.

Yes, you should not rebuild the mail server more than once. It must be build and works fine.

your command "yum install -y gitlab-ee" does not make sense since the script doing that.
I would recommend you asking a compitent sysadmin, I guess you have a problem with yum and the script returned many errors which were ignored by you.

I do not understand why did you disable mod_security xD I believe there something else but won't not guessing since too many reasons.

You have to recheck and rewrite the configuration. In the future you have to use the Templates since Apache will rewriting default files.
